Avocado omelet boats are a sight to be seen and even better to eat.

Avocado Omelet Boats Recipe

Cook Time: Approximately 15-30 Minutes

Ingredients

  • 1 large avocado per person
  • 2 strips of bacon per the whole avocado, finely chopped
  • 2 bell peppers, finely chopped (different colors)
  • 1 bunch of green onions, finely chopped
  • 1 egg per half avocado

Preparation & Cooking

  1. Preheat MAK Grill to 400°F.
  2. Slice each avocado in half lengthwise, removing the pit.
  3. TIP: Use a muffin tin to hold the avocados upright when preparing/cooking.
  4. With a spoon, scrape out enough avocado to form an avocado boat.
  5. Gently pour one egg into each “boat,” holding back about half the egg white as it will overflow.
  6. Sprinkle each boat with the finely chopped bell peppers, bacon, and green onion (and anything else that sounds good!)
  7. Place on grill. (I prefer to use the upper grate, but either will work.)
  8. Cook for approximately 15 minutes. At that point, sprinkle with cheese if desired and cook for another 5 minutes.
  9. Remove when consistency of eggs is to your liking.
  10. Top with sour cream, hot sauce, or whatever you like and ENJOY!
