Grilled Zucchini Planks

Spring is here, I repeat Spring is HERE. It’s been a long cold winter, but finally, we can see a light at the end of the tunnel (and after we get off work thanks to daylight savings!). This means no more braving the cold to shovel out your grill from 10 feet of snow. The cold weather grilling season is finally coming to a close. Time to enjoy things like grilled zucchini planks.

To celebrate this momentous occasion, we’ve provided you with yet another veggie recipe: grilled zucchini planks! We feel that zucchini is best when grilled, but then again we’re pretty biased. There’s just something about that perfectly charred skin combined with the soft, seedy middle that’s hard to beat! You can use this same recipe for all kinds of squash variations, the sky’s the limit. Enjoy!

Ingredients

Pellet Recommendation: Mesquite or Hickory pellets

Preparation & Cooking

  1. Wash and slice zucchini into rounds.
  2. With the FlameZone™ cover removed, start the grill and adjust setpoint temperature to 450°F.
  3. Preheat your MAK grill.
  4. Salt and pepper both sides of the zucchini rounds, lay horizontally across cooking grids.
  5. Grill for approximately 6-8 minutes per side, using tongs to turn over once.
  6. While grilling, baste rounds with Italian salad dressing.
  7. Use tongs to remove rounds from the grill and serve!
