Gourmet Cold Smoked Cheese & Nuts Recipe

If you’ve never tried cold smoking, these lingering chilly days offer the perfect opportunity for giving it a try. Ingredients

  • 1 block of cheese (semi-hard or hard cheese recommended)
  • 1 cup of unsalted almonds
  • 1 cup of walnuts
  • Your choice of seasoning (for the nuts)
  • aluminum foil

Pellet Recommendation: Hazelnut pellet blend

Preparation

  1. Start the grill; leave setpoint on SMOKE.
  2. Allow grill to preheat, approximately 10 minutes.
  3. Cut cheese into squares no larger than 1 1/2 inches thick.
  4. Place cheese blocks and nuts on foil arranged on top of the grate inside your Warmer/Smoker box (or set cheese on a pie tin or plate).

Cooking

  1. Smoke cheese and nuts for approximately 20-60 minutes, depending on the level of smokey flavor you desire.
  2. Carefully remove everything from grill and allow to cool.
  3. Serve or store in an airtight container in the refrigerator.

General Tip: “Smoking cheese is best done when outside temperature is below 80°”
